We grew pimentoes in our small garden this year. What better southern classic to use them for other than Pimento Cheese???? Yes, you can get fancy with it, add olives, pecans, walnuts, grapes, etc…..But, I prefer the basic Pimento Cheese.
I took a shortcut by buying finely shredded sharp cheddar cheese. Then diced quite a few of my pimentoes (they are quite small). I added Duke’s Mayonnaise (I prefer Duke’s, but it’s your choice) and mustard to my liking. Add it until you reach a consistency that you like, and what pleases your palate. Then season with a bit of salt and pepper. Mix together in a bowl and southern perfection is served on toasted white bread for an easy weekend lunch or lunch to take to work.
I just love Ball jars and couldn’t resist putting this batch in one.
