It comes to a point when one looks at their life and realizes that a change needs to happen. Change can be many things. Currently, my change it becoming a healthier me without compromising flavor.
I came up with this one, and it was amazingly full of flavor!
I chopped a green bell pepper (next time I will add a red bell pepper as well), a small onion, a few baby carrots, three cloves of garlic and sautéed them in some extra virgin olive oil until they were all well softened. Now this made enough for about 3 reasonable servings. I added 1/4 cup of the mix to 1/4 cup egg whites for one serving. Surprisingly filling.
The plan was to have this mix to where I could add it to egg whites for the next two mornings to carry to work. Cheap and easy to prepare. You will see what happened to the third days portion in the next post….
