Will Cook for Foo: Week 8–Murdering Eggplant

During the recent Farmer’s Market trip, we ran across some unique looking Eggplants. Now, let me tell you, I don’t really enjoy Eggplant. At least the time I did have them, I didn’t. They just sponge up what liquid they are put in. Usually that’s being fried in oil, and they end up being limp and flavorless. I want a nice hardy, crispy Eggplant dish! Is that too much to ask?

Creativity took over…and it may not have been for the good.

I decided I wanted to do something a little different with these little guys I bought. Determined that there was a better way to eat them…a healthier way as well.

I decided to dehydrate them to make Eggplant Chips…don’t judge. *smiles* How hard could it be???

After a bit of research, the Eggplants ended up hand-sliced thin (no mandolin in the house because I prefer to do things by hand) and on a cookie sheet with a spritz of Pam and seasonings. I put them in the oven at 170 degrees for 4 and a half hours. Took them out, and was presented with Eggplant bits. Did my beautiful slices of Eggplant go *POOF* and leave this mess behind? Oh well.

So, my advice…If you try this, use large eggplants, not the pretty small ones I used. Or, you could just leave the cookie sheets for cookies…. *wink wink*

The Foo Fighters song to go with this…talks about someone giving of themselves to someone that continues to beat them down and then stitch them back up. They’re waiting and waiting for the person knocking them down to see the err of their ways. The person singing the song asks the aggressor how they can go on when their murdering someone…killing them like they do.

Well, you know what? I’m not going to go on killing Eggplants. I have seen the err of my ways…I’ve tried and tried to prepare them the way I want them. Each time “stitching” them up with new ideas from my head. Each time I’m slightly disappointed. Well no more! I will no longer murder Eggplants. That’s going to be left up to you… *smiles*
