Low Carb Chicken Burritos

Nothing, I mean absolutely nothing was going to help this dish photograph well.  Ha.  Nothing.  However, it tasted SO good that we had to make it a few days later.  To be perfectly honest, we considered making it a meal prep, but couldn’t quite figure out how to keep the tortilla from getting too soggy while waiting in the refrigerator for us.  So, this will remain a weeknight quick meal for us.

We found these Carb Smart Whole Wheat Tortillas that are only 5g net carbs.  When you’re only eating 20g net carbs a day, these work out to be quite nice to have on hand for a quick meal…especially if you’re craving bread.  They’re nice and soft, and don’t tear when rolling up the burritos.  That’s a good tortilla, in my opinion.

There isn’t really a recipe to give you on this one, but more of instructions, I guess.

Low Carb Chicken Burritos

Step 1) Cube two chicken breasts into bite sized pieces and put into a skillet with hot avocado oil.

Step 2) Add to the pan a generous helping of chili powder, a sprinkle of cumin, and salt.  I wish I had exact measurements to tell you.  Add in about two tablespoons of your favorite low carb salsa.  Stir that all together and continue to cook over medium-high heat.

Step 3) While the chicken is sauteing, lay out two tortillas and sprinkle with shredded cheese.  We typically look for the cheese that is zero carbs or the lowest carbs for the type of cheese we’re wanting.  If you shred your own, you can save on carbs from the cornstarch that most shredded varieties use to keep the shreds from sticking together.

Step 4) Once the chicken is completely cooked, and the “sauce” in the pan is thickening a little, take the chicken off the burner and spoon it evenly between the two tortillas.

Step 5) We typically put a little more salsa on top at this point, and sliced avocado.  Wrap them up, burrito-style.

Step 6) Wipe your pan out, and leave over the hot burner.  Place the burritos back in the pan to get them toasted on the outside.  Flip when the one side is as toasted as you like.

Step 7) Place on your plate and top with a low carb white cheese sauce of your choice.  Enjoy!
