Beef Stroganoff – Konjac Noodle Goodness!

20200423181307_IMG_1589One of the food items we’ve had to learn to replace are any kind of noodle.  You name it, we love it…macaroni, tagliatelle, rigatoni, farfalle, penne, spaghetti, etc.  Luckily, the konjac noodle options aren’t that bad.  The one we enjoy the flavor of the most is from Skinny Pasta.  You can find their website here.  We don’t find the smells or too weird of a texture with this company.  It’s definitely worth a try if you’re trying to cut carbs.

20200423173757_IMG_1585When we prepare it, we pan fry them.  Some people boil them, but I like to just put them in a dry pot or pan and let them sit over medium-low heat on the stove until I’m ready to add them to the dish.  For the stroganoff, I added them to the dish before adding in the sour cream.  It allowed them to soak up the flavor of the beef.  You could absolutely leave them in there, but I chose to remove them to plate them in the bowls first.

This recipe was great, and the flavors were perfect.  I think that various stroganoff recipes can have too much sour cream in them, but this one ended up with a great balance.  You can find the original recipe by clicking here.  It’s a great site and has lots of awesome recipes.

Keto Beef Stroganoff

Ingredients:

  • 20200423181407_IMG_15932 tbsp avocado oil
  • 3/4 pound steak in bite-size pieces
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 tbsp parsley, fresh and chopped
  • 1 tsp Salt and pepper

Directions:

  1. Heat the avocado oil in a large skillet over medium-high heat.
  2. Add the beef and saute it for about 2 minutes until lightly browned.
  3. Remove the beef from the skillet and set aside on a plate.
  4. Using the same skillet, saute the onion, mushroom, and garlic until they are cooked, about 5 minutes.
  5. Add back the beef to the skillet. Pour in the beef broth and heavy cream and bring to a boil.
  6. Turn the heat to low and simmer until the beef is very tender, about 15 minutes.
  7. Stir in the sour cream and season with salt and pepper. Sprinkle parsley on top and serve.
