Happy Cinco de Mayo everyone!
As I stated yesterday, the recipes for my Cinco de Mayo meal would be coming out today. First up, is the Layered Bean Dip Appetizer.
The fun thing about layered dips is that you can do whatever in the heck you want to do! You can put ANYTHING in them. I stuck to what I thought would go well together for Cinco de Mayo. This is definitely one of those things to make your own.
Layered Bean Dip (My Way)
- 2 cans refried fat-free beans
- 1 can of hominy
- 1 can chunky Rotel
- 1 can diced green chiles
- 1 cup shredded Mexican Queso (I just found this in the cheese section at Wal-Mart. They have a whole section dedicated to this delicious white Mexican Queso.)
- 4 green onions (diced)
Directions:
Layer all items in order of list. Bake at 350 degrees for 20 minutes or until cheese is nice and melted. Serve with tortilla chips.
