Gruyere Butternut Soup? Yes, please!

I do believe that one of the many beauties of food is that we are constantly able to have new experiences by either trying new foods while out or cooking something new. Now, I don’t remember the first time I tried Gruyere, but it was a beautiful moment. It’s the cheese I tell others about when they ask me what my favorite cheese is. Yes, people actually ask that, and they should! Cheese is awesome!

Today was a time that I needed to get back to something I derive happiness from, and “beautiful food” was the search on Pinterest. Once the Smoked Gruyere Butternut Soup recipe showed up in the search, I was sold.  I took the round trip to my favorite Lowes Foods, flipped on Pitbull in the kitchen, and let the magic happen. The Gruyere was the perfect touch to a sometimes simple soup, and I would definitely make this again. Perfect for fall.

Recipe from HowSweetEats.com. It’s a wonderful site with “beautiful food”. I wasn’t able to locate smoked Gruyere, but everything else was on point and delicious. It was a very filling soup. I made extra of the spicy chickpeas and will be keeping that recipe around for making a snack to keep around even without the soup.
